August Fondue Recipe of the Month
Cream Cheese Icing
This fondue perfectly complements cookies and fruit!

DISCLAIMER: Sephra cautions against using chocolate or fondue fountains outdoors due to problems caused by environmental factors such as wind, extreme temperatures, and insects.
- 3 lbs cream cheese (room temperature)
- 6 cups powdered sugar
- 1 cup granulated sugar
- 3 1/2 cups milk
Cream the sugars and cream cheese with an electric mixer. Scrape down the sides of the bowl often to keep mixture smooth. Slowly add the milk until fondue reaches the appropriate consistency. Makes enough for the largest Sephra home fountains.

Sephra Chocolate Cupcakes

Take a basic cake recipe and make it delightfully decadent by adding Sephra chocolate.
- 2/3 cup shortening
- 1 1/2 cups sugar
- 3 eggs
- 2 1/2 oz (1/3 cup melted) Sephra Premium Dark Chocolate, melted
- 2 cups flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/4 cup buttermilk
Cream the sugar and shortening until light and fluffy. Add the eggs and melted chocolate and stir until mixed well. Add half the flour mixture and stir until smooth. Mix in half of the buttermilk. Add the remaining flour and mix until smooth. Stir in the rest of the buttermilk. Spoon into muffin tins lined with paper and bake for 12-15 minutes at 375°F.
Yield: 2 dozen
Crazy Cookie Ice Cream Sandwiches

Beat the heat with these too-good-to-be-true
ice cream sandwiches.
Must freeze overnight.
- 12 Sephra Chocolate Chunk Cookies (see below)
- 1/2 gallon ice cream (any flavor)
- Various toppings (sprinkles, nuts, chocolate, etc.)
Sephra Chocolate Chunk Cookies
- 1 cup shortening
- 2 cups brown sugar
- 2 eggs
- 4 cups flour
- 3/4 tsp. baking soda
- 3/4 tsp. salt
- 3 cups Sephra chocolate chips or chunks
Cream the shortening and sugar until light and fluffy. Add the eggs and mix. In a separate bowl, sift together the flour, soda, and salt, and add to the sugar mixture. Stir in the chocolate chunks. Drop by heaping tablespoons onto lightly greased cookie sheet. Bake at 375°F for 8-12 minutes. Do not over-bake; cookies work best when softer.
Yield: 3 dozen (will have leftovers)
Bake cookies according to recipe above. After cookies have cooled, scoop desired amount of softened ice cream onto bottom of cookie. Press another cookie on top of the ice cream with the bottom facing in. Trim the ice cream around the edges of the cookie with a hot knife until it is even. Wrap individual sandwiches in tin foil and freeze for 1 hour. Remove sandwiches and roll ice cream edges in topping of your choice. Rewrap in foil and freeze overnight.
Before serving, dip sandwich halfway into melted Sephra Premium Dark Chocolate. Let set for 1-3 minutes in the refrigerator.
Yield: 6 sandwiches

Customize Your
Chocolate Flavor
Sephra’s Dark chocolate is semisweet, but some may like it a bit sweeter. If you want to lighten up the taste of your Dark chocolate, simply add Sephra White chocolate. With enough White chocolate, you can create Milk chocolate. To do this, combine White to Dark at a 5:1 ratio. By combining chocolate flavors, you can customize to find the taste your family loves best!

Here’s a great idea from a Sephra customer:
“When we’re using our Sephra fountain with kids around, we’ve found a great way to prevent mess! We fill small plastic cups (or even Dixie cups) with some of the melted chocolate and hand them out to the kids. This way each child has a personal serving of chocolate and we don’t have to worry about drips or double-dipping. It also helps lessen crowding around the fountain.”

Hot! Hot! Hot!
What do I do if my Sephra chocolate arrives melted??
In summer months, it’s possible that your chocolate may soften during shipping. Sephra chocolate—because of the properties that allow it to flow smoothly through fountains—is especially susceptible to heat. If your chocolate has softened or melted during shipping, don’t worry! This will not affect the quality of your chocolate in any way. Simply store the chocolate in a cool, dry place. Do not freeze or refrigerate it as condensation can affect its consistency.
To prepare the chocolate for use in the fountain, simply follow the microwaving instructions on the bag. You can break up the chocolate within the bag to help it melt faster, or chop it into smaller chunks or shavings for use in other recipes.
