Dear Chef Hampton,

I have 2 Sephra fountains and I want an eggnog fountain in one of them. Would it work in it if I run the motor but not the heating element?

Dear Laurie,

Eggnog is a great idea for the holidays. When trying to run regular eggnog through the fountain, however, there are a couple of problems you’ll encounter. First of all, eggnog is generally too thin to be drawn up by the auger in the fountain’s cylinder. Secondly, having an egg product out at room temperature for too long poses a health risk.

To remedy this, I took a recipe for eggless eggnog and adapted it to be thick enough to run through the fountain. The recipe I came up with is an eggnog-flavored dip rather than a drink, as that is better-suited to run through the fountains. The dip runs best on no heat and makes enough for the largest Sephra home fountains.

December Fondue Recipe of the Month:

Eggnog Dip
Fondue’n it festive! Bring the popular
taste of eggnog to your fountain.

4 boxes (3.4 oz) instant vanilla pudding
12 cups milk, divided
2 teaspoons ground nutmeg
2 tablespoons vanilla extract

Prepare the pudding as directed, adding the nutmeg to the 8 cups of milk (2 cups per box of pudding). Once pudding is set, add the remaining 4 cups of milk and the vanilla. Stir until fondue is at a uniform consistency.

Run on no heat.

Fill the fountain to capacity and refrigerate the remaining fondue for refills throughout event if necessary.

Chocolate Serving Idea

Dye your white chocolate blue with an oil-based chocolate coloring found at bakery supply or craft stores. This creates a festive Hanukkah touch to your family celebrations!


Winter Popcorn Mix

6 cups of air-popped popcorn
2/3 cups of Sephra Premium
    Milk Chocolate chips (about
    1/3 cup melted chocolate)
1/4 cup toffee bits

Pop popcorn and sort out the unpopped kernels. Set aside. Melt chocolate slowly over burner or in microwave.

Mix toffee bits in with melted chocolate. Pour over popcorn and stir until evenly coated. Spread on cookie sheet and let harden in refrigerator for 15 minutes.

Break up and put into bowl. Enjoy!

A twist: Use Sephra Belgian White Chocolate and crushed candy canes instead of milk chocolate and toffee bits.

Hands-on Candy Craft

Dip candy canes in Sephra Premium Milk Chocolate then top with red and green sprinkles or drizzled white chocolate. Lay flat on wax paper and let harden in freezer.

Give these fancy candy canes away as gifts or use them as decorations.

A twist: Use the candy canes to stir your hot chocolate for an extra zip of peppermint.
