Basic Chocolate Fountain Preparation
In this segment we'll show you how to operate the Sephra Chocolate Fountain. After you've made sure that the Fountain is level, and the bowl is filled with melted Chocolate, turn the Rocker switch to the start position. This will cause the Augur inside the Cylinder to begin spinning which lifts the melted Chocolate to the top of the Fountain. Watch the Crown at the top of the display and shut the Fountain off before the Chocolate crests over. Wait about 10 or 15 seconds as the Chocolate recedes back down inside the Cylinder.
Burping a Chcoloate Fountain
Trapped air bubbles will escape, ease out the top in the bowl... this is sometimes inelegantly referred to as burping the Fountain. It's important that any air be removed from the Cylinder as air bubbles in the Chocolate can diminish the flow of Chocolate resulting in unsightly gaps. As the Chocolate Cascades over the teers repeat these steps as necessary until all air has been released from the Cylinder then click the Rocker switch to the start position and let the Fountain run.
A Flowing Chocolate Fountain
With all the air removed and the Chocolate at the right temperature the flow should be smooth and shiny. It will take several minutes of the Chocolate flowing for it all to come to the right temperature where the cocoa butter crystals and solids will combine thereby creating the glossy Sheen to the Chocolate.
